Cannabis shortbread
The arrival of Christmas means we can tuck into many of our favourite sweet treats, including shortbread cookies; but these ones have our special touch.
Come on, discover their crunchy exterior and soft centre by baking a batch of your own!
All of your friends will be impressed with these delicious cannabis shortbreads.
Ingredients for 10 people:
- 300 gr of cannabis butter
- 300 g of wheat flour
- 100 g of toasted almonds (with no salt)
- 1 lemon
- 1 teaspoon of cinnamon (about 10 g of ground cinnamon)
- 350 g of icing sugar (300 g for the shortbread and 50 g for decorative dusting)
Preparing the base:
First toast the flour – be very careful not to burn it! Place the flour in a frying pan on a low heat and toast it while stirring constantly for around 7 mins.
Once toasted, sift it to remove any lumps, then leave it to cool. Once the flour has cooled, shape it into a volcano and place the slightly softened marijuana butter, grated lemon zest, finely ground almonds, cinnamon and 300 g of icing sugar in the centre. Remember to set aside 50 g of icing sugar for the decoration.
It’s now time to get your hands dirty; knead the mixture by hand until you have a fine dough. When the texture is just right, cool the dough in the fridge for 90 minutes.
Preparing the shortbread cookies:
Preheat the oven to 120 °C.
Roll out the cooled dough on a smooth surface until approximately 1 cm thick.
Use a glass or mould to cut out circles, then place them on a baking tray. Leave about 3 cm between each cookie.
When the oven is hot enough, place the baking tray on the middle shelf with heat from above, below and the fan on (if your oven has one). Bake for about 25 minutes.
When baked, take the tray out of the oven and use a sieve to dust the rest of the icing sugar over the warm marijuana shortbread cookies.
It is a good idea to let them cool in the fridge before removing the cookies from the baking tray.
